for ice cream/flavor nerds: cherry blossoms pair well with drupe fruits like peach, plum, and apricot due to sharing a common genus ("Prunus") and having complementary flavor profiles of the blossom's floral & almond notes with the strong sweet & sour of stone fruits. While developing this seasonal special we were fortunate enough to find fresh Dapple Dandy pluots available at Talarico's Produce. A 75% plum / 25% apricot hybrid, pluots combine the sweetness of plums with the floral notes of apricots, and the Dapple Dandy's specific balance of sweet-tart flavor with pinkish-red flesh best suited for evoking the taste and sakura-pink color we had in mind.
